These cupcakes are so rich that they are definitely made for red velvet lovers only. I actually made them a few months back while my site was going through a design makeover. I hadn't intended to post the images, so please excuse the lack of detail and maybe even the overly edited photos. The recipe is quite simple, anyone with an oven, and a muffin tin can make it. So I thought I should pull out the old photos and put together a post, perfect for and in honor of Valentine's Day.
All you need to do is purchase your favorite yellow cake box mix. With the dry ingredients mix together 1/2 cup powdered coco. Once you add the egg, water, and oil (or other required ingredients) add a few drops red food coloring, mix it well, then add 1/2 cup semi sweet chocolate chips. Bake as recommended on the box. Once baked let cool and poor a store bought chocolate glaze over the cupcakes. Once the chocolate is set decorate with your favorite cream cheese frosting. That's it!
The best part of these cupakes is eating them... You might also like this vegan red velvet cake recipe.
