Recently I felt the winter sniffles creeping up. Being the type to try every possible remedy prior to giving into a cold I decided to make Kompot, Russian homemade juice. This is a classic Russian drink that is served in most Ukrainian and Russian restaurants. It reminds me of my childhood and lovely grandma, who prior to juicers would make it by simply boiling fresh and dried fruit. What I love most is that it's full of antioxidants and can be served warm or chilled. You can also try leaving some pieces of berries in the juice and freezing it into popsicle molds for a fun and healthy snack. Enjoy!!
- 3-6 apples and or pears chopped, remove the core
- 2 cups fresh berries {blue berries and strawberries are best}
- 3 cups dried fruit of choice {plums, apricots, apples cranberries etc.}
Instructions:
- Fill half a large pot with water.
- Bring pot to a boil.
- Drop in all fruit and bring to a simmer.
- Once at a simmer bring down heat to low and let cook with the lid off for approx. 30 minutes.
- Remove half of the amount of fruit and add about 2 cups more water and let cook for another 10-15 minutes.
- Remove the rest of the fruit and strain the juice.
- Serve warm or let cool and then chill in the refridgerator in a glass container.
- Note: Feel free to add 1/2 cup sugar white or brown. You can store juice in the fridge for 1 - 2 weeks. Like most juice you may need to shake or stir before serving.
