Usually breakfast consists of eggs, cereal, or toast with almond butter. However last week I purchased a pack of banana chocolate chip muffins that were finished in two days. My boyfriend gets an early start to the day & does not always have time to make breakfast. Seeing how much he loved the muffins I decided to make a small batch at home. What I love most about this recipe is that it's doesn't require using butter. Instead I substituted milk for half & half, used 2 tbsp. mini chocolate chips, & 2 tbsp. crushed walnuts, giving it a creamier & heartier taste. These also make for a good mid-day pick-me-up. The best part is if you follow the recipe as is they are under 200 calories. Now that's amazing!
